Spice Pumpkin Muffins

Spice cake mix
1 can pumpkin
1/2 c. sugar free applesauce

Mix well and bake at 350 for 20-25 minutes.

Add to a small bowl and mix to make a THIN glaze: 2-3 TBSP powdered sugar and almond extract. Drizzle over hot muffins.

These were good for breakfast, and stayed super moist. I liked them more than Jeff, but he's not into health-like food like I am. I usually make a batch of these and put them in the freezer and grab one to put in my lunch bag the night before. In the morning the muffin is perfectly defrosted.
