Choco Chip Cookie

I adapted this from a recipe I bought a couple weeks ago. That recipe called for Crisc0, but I don't ever have shortening on hand. So, I adapted it to be used with butter. Additionally, this can be mixed by a wooden spoon--you don't have to get the beaters out for this one!

1 c. butter
2/3 c brown sugar, packed
1 c white sugar
2 large eggs
1 tsp real vanilla
2 1/2 c flour
1/2 tsp salt
1 tsp baking soda
1 c semi-sweet chocolate chips

Soften butter until almost completely melted. Stir and let cool slightly (there will be a few "bumps" in the butter). Mix in brown sugar, then white sugar. Let sit about 5 minutes. Add eggs, vanilla, salt and baking soda. Mix in flour 1/2 c at a time. The dough will be slightly sticky and stiff. Add chocolate chips and mix thoroughly.

Drop by spoonful onto parchment lined cookie sheet. Flatten with the bottom of a class and bake at 375 degrees for 7-8 minutes, or until slightly browned at the edges.
