Just Like Village Inn Pancakes

My 4-H cookbook was finally delivered! Right away I found the recipes I submitted and checked to make sure they were right, then I started reading, and reading, and reading the book.

I LOVE reading cookbooks. I'll spend hours just reading one.

Anyway, the first recipe I decided to try was pancakes. It's highly unusual for me to try a pancake recipe. I love my crepe-like homemade pancakes, which I don't use a recipe for--just a pinch of this and a dash of that. However, I decided to try these, because Jeff likes fluffy pancakes.


Ingredients
1 c. buttermilk
1 egg
1 1/2 TBSP melted butter
1 1/2 TBSP sugar
1 c. flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt (omit if using salted butter)

Mix dry ingredients. Add wet ingredients to the dry mixture and stir until blended well.

Cook over medium heat. Batter is thick, so you may have to swirl it with your spatula. This makes 7-8 pancakes.

VERDICT: First, I can't believe my first recipe out of this cookbook was a pancake recipe. There are SO MANY I want to try--and some I've wanted to try for over 10 years when my friends made them for fair. Second, we both LOVED this recipe. They were light, soft and had a great flavor. Plus--they really did taste like Village Inn pancakes! :)

This recipe will make its rotation with my mom's homemade crepes!

Village Inn using malt powder in their recipe for buttermilk pancakes, I don't see
it in your recipe..

Yes I did try yours,and this is NOT!! like there's at all,sorry you miss the mark try again. By the way the aka Food Princess" You might want to rethink that. LOL
