I had to make something green for St. Patrick's Day, right?! Well, I pulled this recipe out, and decided it would work perfectly. I paired this up with ham and potatoes for a nice Irish-like supper.
Ingredients
1 container fat free Cool Whip
1 can crushed pineapple, DO NOT DRAIN
1 box of sugar free pistachio pudding, just the powder
1 c small marshmallows
1/2 cup chopped pecans
Mix together in a large bowl and let sit in the refrigerator for at least one hour.
VERDICT: My mom used to make this when I was a kid, and I still like it!
